The phases of deglutition, or swallowing, occur in the following order:
- Voluntary phase
- Pharyngeal phase
- Esophageal phase
In the voluntary phase, the food is chewed, mixed with saliva, and formed into a bolus in the mouth. The tongue then pushes the bolus towards the back of the mouth and into the pharynx.
The pharyngeal phase is an involuntary reflex that is triggered when the bolus hits the back of the throat. The larynx elevates, the epiglottis closes to prevent food from entering the trachea, and the bolus is pushed into the esophagus.
The esophageal phase is also involuntary. The bolus is pushed down the esophagus and into the stomach through a series of muscular contractions called peristalsis.
